Cherry Pie for Two

As I’m writing this, it’s Sunday afternoon and I’m awaiting the arrival of my daughter. She’s scheduled to have her wisdom teeth removed early tomorrow morning (and, ironically enough, my son is scheduled for a consultation with the same oral surgeon later in the afternoon. Apparently, this is the second wisdom teeth season of my life.) So the upcoming week is going to be filled with caretaking of various sorts, and I may or may not be posting as often as I normally would.

For today, though, rather than posting an original Table for Two recipe, I thought I’d share one that I’m planning to try out myself sometime in the near future. This recipe for Rustic Cherry Pie makes exactly two little pies–two galettes, to be more precise–and could easily be used to make different types of pies, depending on your favorite fillings. I love cherries, so I’ll mostly stick with this filling, but I will swap out a gluten-free flour blend for the wheat flour in the crust. And I’ll probably use almond extract in place of the vanilla in the filling. And I might add a few toasted almonds to the top before serving, because cherry and almond is a terrific flavor combination.

I love galettes because they aren’t supposed to be picture perfect: the crust is always a little lumpy, and the filling often runs out of it, and that’s okay. The point of a galette is to bring something homey, sweet, and comforting to the table, not to impress anybody. I can’t think of a better way to wrap up a cozy winter dinner for two–or to show a couple of the people you love that you’re glad to have the chance to take care of them.
